Colombia - Medium / Dark
Some coffees are perfectly happy being one thing. This isn't one of them.
From Colombia's Cauca region, this is a coffee we like enough to roast both medium and dark — and it turns out to have a pretty different personality depending on where you take it.
At a medium roast, subtle mango brings a little tropical brightness to the cup, balanced by cocoa powder and a panela-like sweetness. It's approachable, sweet, and easy to drink without being one-dimensional.
Take it darker, and things get a little cozier. The chocolate becomes rounder and deeper, with toasted almond and toffee joining the party. Same coffee, different personality.
Whichever direction you take it, this one is just plain delicious. Great as drip, and equally at home in a French press.
