Chiapas has a pretty recognizable thing going on when it comes to coffee: lively acidity, plenty of sweetness, and enough character to keep you paying attention. This year’s crop is a particularly nice example of the region, with notes of almond, Demerara sugar, and clementine all getting their turn.
Alongside an almond-like nuttiness, the Demerara adds a deep, caramely sweetness, while the clementine keeps everything bright and juicy. The signature Chiapas acidity ties the whole thing together with a persistent little nudge that keeps you coming back for more.
The result is an engaging, balanced cup that manages to be both interesting and ridiculously easy to drink. Which, honestly, is a pretty good place for a coffee to land.
